TIPS FOR MAKING GOOD RED CURRY SAUSAGE FRIED RICE
1. Use a day-old rice
A day-old rice tends to be at a “dry” side, which is good for fried rice and will prevent it from clumping together when you stir fry it. Simply cook the rice the day before and chill overnight so it is ready to be made into fried rice the next day.
2. Heat
A good stir-fry of any kind needs heat. High heat will prevent your rice from turning soggy.
3. Less is more
You will be surprised that with only a few ingredients, you can actually make a really good fried rice like this. Not all fried rice needs soy sauce. This recipe has nice, rich, savory taste from the Eckrich Smoked Sausage, Thai red curry paste and aromatic basil leaves.

IF YOU DON’T HAVE A DAY-OLD RICE
It is still possible to make good fried rice if you don’t have day-old rice. Sometimes I do want some fried rice but there isn’t any leftover. Warmed rice tends to clump together because they are stickier. So, here’s what you can do: spread the rice on a baking sheet in one layer and pop this into the fridge to let it chill for 15 minutes or longer if you have the time. This will help!

THAI RED CURRY SAUSAGE FRIED RICE VARIATIONS
There really isn’t a “fixed” formula when it comes to fried rice, which is why it is one of my favorite foods to cook. You can swap out or add things you like to the fried rice. Here are just to mention a few:
1. Use other Eckrich Smoked Sausage varieties (the whole line is so versatile, it’s hard to choose just one!)
2. Use brown rice
3. Use quinoa
4. Use cauliflower rice
5. Add eggs
6. Use green onions instead of basil leaves

Ingredients

  • 14 oz Eckrich Polska Kielbasa Skinless Smoked Sausage
  • 2 tbsp cooking oil
  • 1 small onion peeled and chopped
  • 1 cup mixed veggies thawed if frozen
  • 4 cups cooked white long-grain rice
  • 1 cup basil leaves loosely packed

Seasonings:

  • 2 tbsp Thai red curry paste
  • Salt to taste

Instructions
 

  • Slice sausage at an angle to about 1/2-1 inch slices with a knife. Set aside
  • Preheat a large skillet or wok to high heat. Add cooking oil and swirl to coat the skillet. Add onion and stir fry for 2 minutes. Add mixed veggies followed by red curry paste. Stir fry for another minute. Add sausages and stir fry for about 30 seconds. Add the rice and stir to mix everything. The rice will pick up the red color from the red curry paste
  • Have a taste and season with salt to your taste. Add basil leaves. Turn off the heat. Stir to mix everything. The residual heat will continue to soften the basil leaves without overcooking them
  • Ready to serve

This was very tasty. My husband would eat stir fry every night if I made it so this dish is a great alternative. I used fresh veggies instead of frozen. I didn’t have enough basil on my plant so I used a combination of cilantro and basil.
