Few weeks ago I received a package in the mail from Singapore. I opened it up and it was packed with my favorite snacks and packages of Chinese herbs for cooking tonic soup. They were from my sister and my future brother-in-law . I was so touched! There’s nothing better than getting a package in the mail packed with your comfort foods when you are so far away from home. Thank you guys 🙂
So, here it is, I opened up a package of the prepackaged Chinese herbs that comes with the following herbs:
The package is formulated to improve immunity, body resistance and blood circulation. I like the flavor the ginseng gives to the soup. Now, I’m not really into “chewing” ginseng. I’m fine using it to cook a soup, but my hubby ate the whole root just like that! This is easy to prepare and it can accompany your meal. The Chinese likes to have a soup as an appetizer. I love you sis 🙂
CHICKEN WITH GINSENG SOUP (6-8 servings)
1 lbs (500 g) of chicken parts (with bones will be better)
5 pieces of red dates
6 C (1500 ml) of water
5-7 pieces of wild yam
1-2 ginseng roots
1/4 C of goji berries
A handful of Fragrant Solomonseal Rhizome
COOKING METHOD:
1. Wash all the herbs before cooking
2. In a big pot, pour in 6 cups of water. Add in the chicken and the rest of the herbs. Bring it to boil and then lower the heat and let simmer for 1 1/2 hours. You many need to skim off the foam as they form
3. Great to have it alone or to accompany a bowl of rice along with other dishes

Hi, can you please give instructions if I were to use slow cooker? How long for low and high setting please.
Hi, you can cook in on slow for 8 hours and high for 6 hours.
