I think I eat more noodles than rice on any given days 🙂 I like cold noodles and cold sesame soba noodles is one of my favorites and so easy to make. This serves as a nice appetizer.
COLD SESAME SOBA NOODLES (4 servings)
12 oz Soba noodles (you can substitute with spaghetti)
3 tsp of garlic (minced)
3 tsp of ginger (grated)
3 Tbsp of sesame paste
1 Tbsp of creamy peanut butter
2 Tbsp of light soy sauce
3 Tbsp of sugar
1 tsp of chili powder
2 Tbsp of water
3 Tbsp of sesame oil
2 Tbsp of white sesame seeds
1 Tbsp of rice vinegar
2 stalk of spring onions (chopped)
2 Tbsp of canola oil
COOKING METHOD:
1. Cook the soba noodles according to the package. Once cooked, toss with with 3 Tbsp of sesame oil
2. In a big bowl, add in sesame paste, peanut butter, soy sauce, rice vinegar, water and chili powder and mix them well
3. Heat a skillet with 2 Tbsp of canola oil and stir fry the garlic and ginger until fragrant. Be careful not to burn them. Add this into no.2
4. Add in the cooked soba noodles and toss the noodles to make sure all the seasoning coats the noodles
5. Garnish with chopped spring onions and sesame seeds. You can even put this briefly in a fridge to “cool” them up a bit before serving. It’s optional.
