This green bean salad can’t be easier to make. The seasonings and toppings I used here are very similar to the Tomato and Spinach Salad I made in my last post. The key is not to overcook the beans. So you still have that crunch. Top it with this topping commonly found in Asian pantry (but not difficult to find) and they turned the humble green beans into another wonderful, simple, and flavorful salad dish. This is another dish you can probably introduce to people who enjoy eating Asian food. It’s not too overwhelming in terms of spices, but it tastes authentic is how I would put it.
GREEN BEAN SALAD WITH PEANUTS
Ingredients
- 1 lb green beans (trim off the ends and cut into 2-inch length)
- 2 Tbsp fried shallots crisp
- ½ cup chopped roasted peanuts
- 1 Tbsp of grape seeds oil or any oil you prefer
- Juice of 1 lime
- 2 tsp of fish sauce or more to taste
Instructions
- Bring about 1 quart of water to a boil. Add in the beans and cook for about 5 minutes. The green beans should be still green and slightly crunchy. Drain off the water and run through cold water. Set aside
- When ready to serve, add in the peanuts, oil, lime juice and the fish sauce. Toss lightly and have a taste and add more fish sauce if needed. Lastly, sprinkle on the fried shallots crisp
