Make this delicious Chinese-style steamed minced/ground pork with salted egg yolks. It is easy to make and dinner is ready in no time.
This is an incredibly easy recipe that my mom made so often when we were kids. We loved it a lot too. I think almost every Chinese household would serve this dish at least on a weekly basis. Well, my mom did anyway 🙂 Being so far away from home, the only way to expose my kids to my childhood food is to cook them 😉 They love this Chinese minced pork patty with salted eggs yolks.
Special Ingredient
Salted eggs (duck eggs to be exact) is not something new in Asian cuisine. It’s been around for a long time. The yolk is usually being used a lot in cooking and baking. It has been used even more extensively these past few years, especially in dessert for that sweet, salty, and umami combination. You can find this at pretty much any Asian grocery store. I can only find cooked salted duck eggs where I am. It’s not easy to find fresh uncooked duck eggs. So, I have made my own salted eggs using chicken eggs by using brining method and salt-cured method.
How to make easy Chinese minced pork patty with salted egg yolks
1. It is best if you can have some fat in the meat. Cut this into smaller pieces and ground it in your food processor, or finely mince the meat with cleaver
2. Add the seasonings and stir in one direction to combine so the mixture resembles sticky paste
3. Separate the salted egg yolks from the whites. Cut the yolks in half. Save the salted egg whites for other use, don’t throw them away. If you plan to use zucchini, peel and cut into 1-inch ring and then cut into quarters. Set aside
4. Transfer the pork mixture into a steaming plate. Use your wet palm to pack the meat down and to smooth the surface to form giant pork patty
5. Arrange the half salted egg yolks on top
6. Bring the water in the steamer to a boil. Steam the pork patty on high heat for 15 minutes or until the pork is cooked through.
7. 5 minutes before end of cooking time, arrange the zucchini around the edge and continue steaming
8. Serve the dish while it’s warm as part of multi-course meal with plain cooked rice
Even if you decide not to use salted egg yolks, you will still end up with a delicious minced meat patty!
Tips for success
1. Don’t use lean meat
I recommend mixing lean cut pork such as tenderloin with pork belly. You want to have some fats for that tender pork patty
2. Stir in one direction to form a paste
You want to consistency of the meat mixture to be paste-like

Steamed Minced Pork Patty with Salted Egg Yolks
Ingredients
- 300 gr minced pork mixture of pork belly and pork butt
- 3 salted egg yolk cut in half
Seasonings:
- 1 Tbsp oyster sauce
- 2 tsp soy sauce
- 1 tsp Chinese cooking wine
- 1 tsp sesame oil
- ½ tsp sugar
- ¼ tsp ground white pepper
- 2 tsp cornstarch
Vegetable (optional):
- 1 small zucchini
Garnishes:
- Fresh cilantro leaves
- Green onion finely chopped
Instructions
- Separate the salted egg yolks from the whites. Save the salted egg whites for other use, don't throw them away
- If you plan to use zucchini, peel and cut into 1-inch ring and then cut into quarters. Set aside
Prepare the meat patty:
- It is best if you can have some fat in the meat. Cut this into smaller pieces and ground it in your food processor, or finely mince the meat with cleaver
- Add the seasonings and stir in one direction to combine so the mixture resembles sticky paste
- Bring a small pot of water to a boil. Cook a tiny portion of the meat paste so you can have a taste. Add more salt or any seasonings to suit your preference. This is the only chance you have to adjust the seasonings before you steam the meat patty.
Steaming:
- Transfer the pork mixture into a steaming plate. Use your wet palm to pack the meat down and to smooth the surface to form giant pork patty. Arrange the half salted egg yolk on top
- Bring the water in the steamer to a boil. Steam the pork patty on high heat for 15 minutes or until the pork is cooked through. 5 minutes before end of cooking time, arrange the zucchini around the edge and continue steaming
Serving:
- Serve the dish while it's warm as part of multi-course meal with plain cooked rice
