I got a request from a fellow reader to include more slow cooking/crock-pot recipes. I personally like crock-pot recipes too. Little work and a meal ready for you in few hours or the next day. I can foresee myself doing more and more of this once my little girl goes to kindergarten full-time (gosh…I’m not ready for her to go to K yet !!). I would want to pack her lunch for school and slow-cooking will be just perfect if I get it started the night before 😉
Pork hocks are suitable for slow cooking and it’s my favorite. Even my 4-year old loves it. She especially loves the skin!! boy, that skin. Smooth and melt in your mouth. I like picking meat off the bones too and that’s why I really enjoy eating pork hocks 🙂 The slow cooking just makes it so tender and absorbs all the wonderful flavor you submerge them in.
Of course I can always make anything work with my noodle head 🙂
NOODLES WITH SLOW-COOKED PORK HOCKS (4 servings)
Ingredients
- 2.5 to 3 lbs of pork hocks
- 2 Tbsp cooking oil
- 5 stalks of spring onions cut off the roots if any
- 10 oz of pasta noodles I recommend angel hair, spaghetti, or linguine
- 2 stalks of spring onion finely chopped
Ingredients to grind:
- 1 large onion peeled and quartered
- 8 cloves garlic peeled
Seasonings:
- 4 Tbsp soy sauce
- 4 Tbsp dark soy sauce
- ½ tsp pepper
- 1 Tbsp fish sauce
- 3 Tbsp Shao Xing wine or dry sherry
- 1 Tbsp of brown sugar
Instructions
- Rub the pork hocks with the seasoning and marinate them overnight
- Place the marinated pork hocks along with its marinating juice in a slow cooker. Heat up 2 Tbsp of oil in a medium sauce pan and saute the onion and garlic paste for about 5 minutes. Add in the spring onion stalks and saute for about 1 minute. Add this to the slow cooker and pour in 1 cup of water. Let it cook on low-setting for about 6-7 hours. The high setting will be about 4 hours. Cook until the pork hocks are tender. Have a taste and season with more salt if needed. It should be savory and lightly sweet at the same time
- Before serving, cook the pasta noodle according to the package. Do not rinse the noodles. Portion it out into serving bowl. Generously ladle the hot broth over the noodles and one pork hocks. Garnish with some chopped spring onion
