The natural sweetness of pumpkin and the umami dried shrimp make a great pair in this easy and popular stir-fry among the home cooks.
One of my favorite easy stir-fry side dishes is this stir-fried pumpkin with dried shrimp. This is very popular in Southeast Asia countries. I love pumpkin because it is such a versatile fruit (yes, it’s a fruit and not a veggie). I love to use pumpkin in both sweet and savory recipes.
How to easily cook the stir-fried pumpkin with dried shrimp
1. Peel and cut the pumpkin into cubes. Soak the dried shrimp in warm water for about 10 minutes or until softened
2. Preheat 1 Tbsp of oil over medium heat. Add garlic and stir fry for about 10 seconds. Add the dried shrimp and stir fry for about 1 minute
3. Add the pumpkin followed by seasonings and continue to stir fry to combine everything
4. Add chicken broth and cover with a lid to let it simmer for about 5 minutes or until pumpkins are softened but not mushy. Have a taste and adjust the seasonings to your taste
5. Sprinkle with some fried shallots and serve as part of a multi-course meal with a rice
Variations
1. Add protein
You can also add ground or thinly sliced meat such as pork or chicken to this dish to make it more complete. Simply add it after stir-frying the garlic and dried shrimp
2. Add an herb
This dish goes well with curry leaves too. I love the aroma of curry leaves. Simply add the leaves after stir-frying the garlic and dried shrimp

Ingredients
- 750 gr pumpkin cubed
- 2 Tbsp dried shrimp
- 1 tsp grated ginger
- 1 Tbsp cooking oil
- 3 cloves garlic minced
- ½ cup chicken broth
Seasonings:
- 1 Tbsp sambal oelek optional, if you want some hot spicy
- 1 Tbsp oyster sauce
- ½ tsp salt
- ½ tsp sugar
