I really like the contrast between the delicate flesh of cod fish and the crunchy sesame seeds in this recipe. The four sauces are named as such because there are four ingredients to make the sauce. The Szechuan peppercorns really kick this sauce up a notch, that biting (ma la) sensation to your tongue is quite addicting, at least to me. Hubby really likes this sauce.
SESAME SEEDS COD FISH WITH FOUR SAUCES
Ingredients
- About 1 lb of cod fillet other suitable fishes: sea bass, salmon, grouper, tilapia
- 3 Tbsp of all-purpose flour
- 1 egg
- ½ Cup white sesame seeds
Marinade
- 1 stalk spring onion finely chopped
- 2 slices ginger finely minced
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp sesame oil
- Vegetable oil for deep fry
Sauce
- 1 Cup of mayonnaise
- 1 Cup of ketchup
- Dash of Szechuan peppercorn crushed- optional
- Oyster sauce: Bring 1 Tbsp of oyster sauce + 1/2 Tbsp oil + 2 Tbsp of water to a boil
- Mix all the sauces ingredients together and set aside
Instructions
- Rinse fish and pat dry with paper towel. Cut into thumb sized thick strips. Mix well with marinade and set aside for a while
- Dredge fish with flour, then coat with egg, followed by white sesame seeds
- Heat oil and deep-fry fish over low heat until cooked through. Remove and drain well. Place on a serving dish
- Serve with four sauces
