I made this Tuna Burgers with Avocado and Corn with my mom not long after I returned from the U.S. permanently (or so I thought at that time!) I missed burgers so much and saw this wonderful recipe on the magazine that I happened to flip through and told my mom we should try and made this and so we did. There is nothing better than a home made burger. A healthy one too!! Now, I made it and let hubby tried it. He loves it! 🙂 He called it a “Gourmet Healthy Burger”
DOUBLE TUNA BURGERS WITH AVOCADO AND CORN (4 burgers)
2 Tbsp olive oil
1 onion (diced)
2 garlic (crushed)
15 oz (425 g) tuna in a can (drained)
1 C bread crumbs
1/2 C parsley leaves
1 egg (beaten)
Salt to season
2-3 red chili (chopped and seeded)
Hamburger buns
Lettuce (optional)
Avocado Sauce (whisk all ingredients together and set aside):
4.5 oz (125 g) creamed corn
1 avocado (diced)
1 tomato (diced)
1/4 C chopped parsley
1/2 lemon juice
Salt to season
COOKING METHOD:
1. Heat 1 Tbsp of olive oil. Saute onion, garlic and chili until soft and fragrant. Set aside to cool
2. Add in tuna to no 1. and mix well
3. Mix in bread crumbs and egg. Add in pinch of salt. Shape the mixture into patties
4. Heat 1 Tbsp of olive oil and brown the patties until it turns golden brown
5. Prepare the bun, dress with lettuce, lay one tun patty then topped with avocado sauce. Top another tuna pattie and layer with avocado sauce again and serve
