Thai-style chicken sandwich is another one of the east-meet-west dish that Martin Yan’s invented in this Martin Yan’s Asian Favorite cookbook. People often say “oh..it’s just another sandwich”. Sandwich is so ubiquitous and people don’t get impressed much by it anymore these days. Well, it doesn’t have to be boring. A little twist here and there, you can make your sandwich a gourmet one.
I always enjoy Thai food because of its great flavor from spices. You put that on a sandwich, it’s really going to make you proud of the sandwich you eat. Give it a try and when you have that in your lunch bag, I think you can’t wait to eat it!
THAI-STYLE CHICKEN SANDWICH
Ingredients
- 2 Tbsp vegetable oil
- ¼ cup diced onion
- ¼ lb ground or minced chicken
- 1 Tbsp fish sauce
- 2 tsp chili sauce
- 2 tsp sugar
- 2 eggs lightly beaten
- ¼ cup Thai or sweet basil leaves chopped
- 2 tsp chopped green onion
- 4 hot dog buns or 8 slices sandwich bread
- Iceberg lettuce leaves
- 1 large tomato sliced
Instructions
- Place a wok or frying pan over high heat until hot. Add oil, swirling to coat sides. Add diced onion and stir-fry for 1 minute. Add chicken and stir-fry for 1 minute
- Stir in fish sauce, chili sauce, and sugar. Add eggs and stir-fry for 1 minute
- Add basil leaves and green onion; cook for 30 seconds
- To serve, line the buns with lettuce leaf, spoon chicken mixture into buns and tomato slices into each sandwich and serve
